Within my planning I have workitems like Brainstorm/planning where more than one person must attend.

I am giving it a low/high estimate (1 to 3 days is realistic)- however, I can only assign it to one owner. This isn’t realistic as a number of people need to work on it together at the same time.

Liquid planner is missing the other attendees from its schedule and doesn’t necessarily schedule the workitem correctly as people other than the owner are assigned to their own workitems.

Does this make sense? Am I missing something?

You’re not missing anything, but I would suggest a slightly different approach.

Your best bet is to make “Brainstorming/Planning” a project. If multiple people will be doing different things for it you can assign them different tasks, ie:
  • Brainstorming / Planning
    • Come up with design ideas, Charles, 1-3 days
    • Come up with design ideas, Adam, 1-3 days
    • Come up with marketing ideas, Liz, 2-4 days

We’re looking into ways to help you break larger tasks like this up into smaller tasks that can be assigned to individual people easily.
